Miso Eggplant
A recipe from Emily

So easy and quick. This is one of my favorite dinners!

Japanese Eggplant

4 Japanese eggplants (I’ve also used one large regular eggplant)
3 T red miso2
½ T sugar
3 T water

Stir miso, sugar and water to mix with eggplant. Pour over as stir frying.Top with roasted sesame seeds. Serve over rice.

  1. This sounds lovely … I love a simple recipe! I will have to make it sometime in the summer when my eggplant-hating husband is away and the beautiful little Japanese eggplants are sold at my favorite roadside produce stand!!
